Dutch Mussel Skewer

INGREDIENTS (6 PERSONS)

STEP 1

Put the mussels in a sink, stir the mussels with your hands while pouring water over them. Then carefully check for dead/open/broken mussels, and throw them away.

STEP 2

Put the mussels in a large, high pan with 150ml white wine and 1 bunch of celery leaves. Sprinkle pepper generously. Place the lid on the pan and bring it to a boil.

STEP 3

Cook the mussels for 6-8 minutes, or until the mussel shells are open. Remove the mussels from the shell. Cut 300g bacon into strips.

STEP 4

Wrap the mussels in a strip of bacon. Thread 2 mussels on each of the (tapas) skewers. Keep the mussels covered in the refrigerator.

STEP 5

Heat a generous glug of olive oil in a frying pan (or several frying pans). Fry the mussel skewers in the frying pan(s) for 2-3 minutes until they are brown and crispy.

STEP 6

Place them on a plate and add 2-3 bowls of dips of your choice.
